Ingredients
- 2.25oz (3 Parts) Light Rum
- 1.5oz (2 Parts) Lime Juice
- 0.75oz (1 Part) Vanilla Liqueur
- 2 Tbsp (1 Part) Vanilla Syrup
Mixing Directions
Pour all ingredients in to a shaker. Fill shaker with ice, shake and strain in to a chilled martini glass.

So I made this drink with some lime juice that I found in the fridge, and it was god awful – like sour and nothing else. I asked Katie what she thought and her answer was just “No” which I don’t think was complimentary. I discovered the lime juice was 3 years out of date, so I went and bought some limes to try with fresh juice squeezed by yours truly.
OMG such an improvement. This is quite excellent, it is sweet, then tart right after and the aftertaste is slightly mouth puckering, but not really sour. The vanilla lingers, and the brown sugar from the vanilla syrup.
This has a lot of flavour, and a lot of depth, I love how the taste changes as it lingers on the tongue, I’ve rarely had anything like that before. It has a very subtle burn at the back of the throat, the only hint of liquor.
